  • A medley of mushrooms, sliced
  • 1 lb ground chickpea flour
  • 1 cup nutritional yeast
  • A dollop of tomato paste
  • A splash of plain Greek yogurt
  • A small amount of water
  • A drizzle of olive oil
  • A light sprinkling of parmesan cheese, grated
  • A dairy-free alternative to parmesan, grated
  • A blend of italian seasoning
  • A crunchy topping of bread crumbs
  • A sprinkle of panko breadcrumbs
  • A handful of parsley, chopped
  • A few leaves of basil, chopped
  • A sprig of thyme, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté until tender, about 5 minutes.
  2. Add tomato, diced tomatoes, crushed tomatoes, tomato sauce, water, oregano, basil, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes.
  3. Preheat oven to 375°F.
  4. In a large bowl, combine spaghetti squash, zucchini, yellow squash, green beans, mushrooms, ground chickpea flour, nutritional yeast, tomato paste, Greek yogurt, water, olive oil, and parmesan cheese. Mix well.
  5. In a separate bowl, combine dairy-free parmesan, italian seasoning, bread crumbs, panko breadcrumbs, parsley, basil, and thyme. Mix well.
  6. Spread a thin layer of the tomato sauce mixture in the bottom of a 9x13-inch baking dish.
  7. Spread a portion of the spaghetti squash mixture in the bottom of the dish.
  8. Repeat layers of tomato sauce, spaghetti squash mixture, and dairy-free parmesan mixture until all ingredients have been used.
  9. Bake for 30-40 minutes, or until the top is golden brown and bubbly.
  10. Let the lasagna cool for 10 minutes before serving.
  11. Enjoy your delicious, vegan lasagna with a side of your favorite vegetables and a glass of water!
