  • 1/2 cup vegan parmesan cheese, grated
  • 1/2 cup italian seasoning
  • 1/2 cup bread crumbs
  • 1/2 cup panko breadcrumbs
  • 1/2 cup chopped parsley
  • 1/2 cup chopped basil
  • 1/2 cup chopped thyme

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté until tender, about 5 minutes.
  2. Add tomato, diced tomatoes, crushed tomatoes, tomato sauce, water, oregano, basil, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes.

  7. Spread 1/4 of the spaghetti squash mixture in the bottom of the dish.
  8. Repeat layers of tomato sauce, spaghetti squash mixture, and vegan parmesan cheese mixture until all ingredients have been used.
  9. Bake for 30-40 minutes, or until the top is golden brown and bubbly.
  10. Let the lasagna cool for 10 minutes before serving.
