Mother's Day Breakfast Ideas

For some breakfast in bed is one of the most popular Mother’s Day traditions. While looking for the perfect breakfast in bed for Mom, I stumble upon a couple recipes that I’m certain you will like and your mom will definitely enjoy this Mother’s Day. As I reflect on my own childhood, I remember the joy of surprising my mom with a simple, yet thoughtful breakfast - it's a tradition I've carried on with my own family, and one that I believe brings us closer together.
If you’re looking for something simple but sweet, these are the recipes for you. I've found that it's often the smallest gestures, like a warm cup of coffee or a favorite pastry, that speak volumes to the special women in our lives.
Toasted Heart Eggs
Ingredients required:
2 Slices of Bread (this is your choice, it can be wheat, white or whatever your mom likes)
2 Eggs
2 Tblsp Butter (more or less)
Directions: Lightly butter both sides of the bread. On the bread, in the center, cut out a heart shape. You can use a knife or a cookie cutter to achieve this. Next, place the bread, including the cut outs, on a pan over medium heat to get a little toasted on one side, then flip over, remove the heart from the center of the bread. Crack an egg into the center, season with salt and pepper, and let it cook to the desired temperature. Flip once more, or not for just a minute, and remove from the pan. Place them on a nice plate and serve.

Watermelon Slices
Blueberries
Kiwi
Grapes
Directions: Using a cookie cutter, cut out hearts from the watermelon slices; do the same with the kiwi or use sliced kiwi if a small enough cutter is unavailable. Alternatively, consider flower shapes, circles, or stars - get creative with the shapes. When you’re done cutting, arrange them in a bowl or on a plate, mixing in some blueberries and grapes or any other preferred fruit.
The Ham and Cheese Stromboli
This recipe only requires 5 ingredients. It is easy enough to prepare in the morning, though simple, it is full of flavor. I recall a particularly busy Mother's Day morning when this recipe saved the day - my family was running late, but I was able to whip this up quickly, and it was a hit with everyone.
Required ingredients include:
1 tube (11oz) refrigerated crusty French loaf
6oz thinly sliced deli ham, or consider using turkey or another type of deli meat; however, I found that ham provides the best flavor combination.
3 green onions (sliced)
8 back strips, cooked and crumbled or chopped; feel free to add more bacon for extra flavor
1 1/2 cups of shredded Swiss cheese; if shredded cheese is not available, sliced cheese works as a substitute, though it may affect the ease of rolling the dough
Directions: Preheat oven to 350°. Unroll dough into a rectangle on a greased baking sheet. Place ham over the dough, leaving a 1/2 inch border around the edges; sprinkle evenly with onions, bacon, and cheese. Roll up jelly-roll style, starting with a long side. Pinch the seam to seal and tuck the ends under. Place seam side down on the baking sheet.
With a sharp knife, cut several 1/4-in.-deep slits on top of the loaf. Bake 20-30 minutes or until golden brown. Cool slightly before slicing. Serve warm.
Pancakes on a Stick
This is a perfect, very fun way to serve breakfast. The options for customization are endless - try adding different types of fruits or syrups, or even a drizzle of Nutella for a sweet and chocolatey touch. As you're preparing this dish, consider making a few extra pancakes to freeze for a quick breakfast on a busy morning - it's a thoughtful gesture that your mom is sure to appreciate.
Gather these essentials:
1 egg
1 1/4 cups (300ml) milk
1 cup (125g) all-purpose flour (plain flour)
1 tsp baking powder
Oil for frying
To serve, consider the following:
Strawberries
Raspberries
Blueberries
Sliced Banana
Maple syrup
Directions: Beat the egg and milk together in a mixing bowl. Sift in the flour and gently mix to combine.
Heat the oil in a frying pan (or use a non-stick pan) over a medium heat. Add teaspoonfuls of the mixture and cook until bubbles form and the bottom is browned. Flip and cook the other side. Repeat, using up the pancake batter.
