Resurrection Cookies: A Sweet Reminder of God's Love

As I reflect on the true meaning of Easter, I am reminded of a special recipe that has become a tradition in our family - Resurrection Cookies. These cookies are more than just a sweet treat, they're a powerful reminder of God's love and the story of Jesus' resurrection, a story that I've seen resonate with my children as they've grown older and begun to understand the significance of the holiday.

Recipe yields 24 servings

I still remember the first time I made these cookies with my children, and how it helped them understand the story of Easter in a more tangible way. It was a moment of clarity for all of us, and one that I will always treasure, a moment that has been reinforced over the years as we've repeated this tradition and explored its meaning together.

Ingredients

  • 1 cup pecan halvesĀ
  • 1 teaspoon distilled white vinegar
  • 3 egg whites
  • 1 pinch salt
  • 1 cup white sugar •

Directions

  • Step 1
  • Preheat oven to 300 degrees F (150 degrees C).
  • Step 2
  • Place pecans in a resealable plastic baggie. Crush the pecans into small bits. Read John 19:1-3
  • Step 3
  • Put 1 teaspoon vinegar into a medium bowl. Read John 19:28-30
  • Step 4
  • Add egg whites to the vinegar. Read John 10:10-11
  • Step 5
  • Sprinkle salt into the egg whites. Read Luke 23:27
  • Step 6
  • So far, the mixture isn't very appetizing. Add 1cup sugar. Read Psalm 34:8 and John 3:16. Beat with mixer on high speed for 12 to 15 minutes until stiff peaks are formed. Read Isaiah 1:18 and John 3:1-3.
  • Step 7
  • Fold in broken nuts. Drop by teaspoons onto parchment paper lined baking sheet. Read Matthew 27:57-60.
  • Step 8
  • Place cookies in the oven close the door and turn the oven off. Read Matthew 27:65-66.
  • Step 9
  • Go to bed. Read John 16:20 and 22. As I drift off to sleep, I think about the darkness that fell on the earth as Jesus hung on the cross, and the sorrow that filled the hearts of his disciples, a feeling that's hard to put into words but one that I've come to understand more fully through our family's Easter traditions, like the year my youngest child asked why we were making cookies to celebrate someone's death, and how that question led to a meaningful conversation about the true meaning of Easter.
  • Step 10
  • In the morning open the oven and take out the cookies. Read Matthew 28:1-9. The sweetness of the cookies is a reminder of the joy and hope that comes with the resurrection of Jesus, and the promise of eternal life that he offers to all who believe in him. As we sit around the kitchen table, savoring the sweetness of these cookies and the warmth of each other's company, I'm reminded of the ways that faith can bring us together, even in the simplest of moments.

Most importantly, as we enjoy these Resurrection Cookies, let us remember the true meaning of Easter and the sacrifice that Jesus made for us. Let us also remember to share this love and hope with those around us, just as the disciples did after the resurrection, and as I do with my family and friends every year when we make these special cookies together, creating a sense of community and connection that extends far beyond our own household.
