Mother's Day Recipes

For some breakfast in bed is one of the most popular Mother’s Day traditions. While looking for the perfect breakfast in bed for Mom, I stumble upon a couple recipes that I’m certain you will like and your mom will definitely enjoy this Mother’s Day. 

If you’re looking for something simple but sweet, these are the recipes for you. 


Toasted Heart Eggs

What you’ll need:

2 Slices of Bread (this is your choice, it can be wheat, white or whatever your mom likes) 

2 Eggs

2 Tblsp Butter (more or less)

Directions: Lightly butter each slice of bread (both sides). On each slice of bread, in the center of each slice cut out a heart shape. You can use a knife or if you have a heart shaped cookie cutter you can use that. Next, place the bread (including the cut outs) on a pan over medium heat so that they get a little toasted on one side, then flip over, remove the heart from the center. Crack an egg in the center of each slice of bread, season w with salt and pepper and let it cook to the desired temperature. Flip once more, or not for just a minute and remove from pan. Place them on a nice place and serve.

 

Fruit Platter

What you’ll need:

Fruit of your choice

Watermelon Slices

Blueberries

Kiwi

Grapes

Directions: With a heart shaped cookie cutter, cut out hearts from he watermelon slices, do the same with the kiwi or sliced Kiwi also works if you don’t have s mall enough cookie cutter. If you don’t have heart shaped cookie cutters you can also use flower shapes, circles, stars or any other shape you have, just get creative. When you’re done cutting you can put them in a bowl or a plate, mixing in some of the blueberries and grapes or any other fruit of your choice.



The Ham and Cheese Stromboli 

This recipe only requires 5 ingredients. It is easy enough to prepare in the morning, though is simple it is full of flavor. 

What you’ll need:

1 tube (11oz) refrigerated crusty French loaf

6oz thinly sliced deli ham, you can also use turkey or other the of deli meat, however I found that ham gives me the best flavor combination.

3 green onions (sliced)

8 back strips, cooked and crumbled or chopped, you can use more bacon if you’d like

1 1/2 cups of shredded Swiss cheese. If you don’t have shredded cheese you can always use the sliced one. It tastes the same, only different is that with the shredded cheese, the dough is easier to roll.

Directions: Preheat oven to 350°. Unroll dough into a rectangle on a greased baking sheet. Place ham over dough to within 1/2 inches of edges of the dough; sprinkle evenly with onions, bacon and cheese. Roll up jelly-roll style, starting with a long side. Pinch seam to seal and tuck ends under. Place seam side down on baking sheet.

With a sharp knife, cut several 1/4-in.-deep slits on top of loaf. Bake 20-30 minutes or until golden brown. Cool slightly before slicing. Serve warm.


Pancakes on a Stick 

This is a perfect very fun way to serve breakfast. You can customize as it however you like. You can add different types of fruits or syrups, you can even try Nutella for a nice sweet and chocolatey touch. 

What you’ll need: 

1 egg

1 1/4 cups (300ml) milk

1 cup (125g) all-purpose flour (plain flour)

1 tsp baking powder

Oil for frying

To serve:

Strawberries

Raspberries

Blueberries

Sliced Banana

Maple syrup

Directions: Beat the egg and milk together in a mixing bowl. Sift in the flour and gently mix to combine.

Heat the oil in a frying pan (or use a non-stick pan) over a medium heat. Add teaspoonfuls of the mixture and cook until bubbles form and the bottom is browned. Flip and cook the other side. Repeat, using up the pancake batter.

To serve, alternate pancakes and fruit on sticks. Add a drizzle of maple syrup.

Notes: A tea spoon of pancake batter is all you need for these mini pancakes. You’ll know when is time to flip them when the batter has tiny bubbles. Don’t over mix the batter. Spread a little Nutella in between the pancakes and the banana. Customize your skewers, make them fun and tasty.
